Cucumber Mango Salsa

Summer holidays are here in our neck of the woods. Our unpredictable Alberta weather has finally caught up to the date. My kids are tanned, the mood is lax, and life is good.

Summer means the return of easy living:

  • More grill, less oven.
  • More bathing suits, less jackets.
  • More fresh, less cooked.
  • More sun, less moon.
  • More sand, less sweeping (ha!).

I've been really keen on trying new things in the past few weeks, and this cucumber mango salsa is definitely a keeper. The refreshing cucumbers mixed with the vibrant mangos makes this a healthy and guilt free topper or dip and if you're anything like us, a side dish!

This recipe is dedicated summer produce and sun freckles.

Tips + Tricks

IT'S so easy to make this salsa. The way to make healthy food quick and easy is to have the right tools.

THIS salsa is great with chips and spread over grilled chicken, or salmon. But I certainly won't be judging if you eat it with a spoon (I do, hehe)

MANGO is a vitamin A powerhouse, primarily beta-carotene. Mangoes also have good vitamin C concentrations and minerals such as zinc, magnesium, and potassium are abundant in mangoes.

THIS cucumber mango salsa will keep in the fridge for 2-3 days - if it lasts that long!

Ingredients

  • 2 mangos, chopped
  • 1 long english cucumber, chopped
  • 1/2 small red onion, diced
  • 1/2 red bell pepper, diced
  • 1-2 hot red peppers, minced
  • Juice of 1/2 lime
  • fresh cracked salt to taste

Instructions

  1. Combine all ingredients in a large bowl, enjoy!

Notes

I used a multi tool chipper, chopper, mincer to make quick work of the prep on this recipe, just like this one!
