He loves fancy food, he loves good food, and inexplicably, he loves frozen pizza rolls.
Personally, I could do without the processed everything stuffed inside of a crispy shell and deep-fried, but I guess the heart wants what the heart wants!
I decided to whip him up a batch of these air fryer pizza rolls a couple of weeks ago and it's amore!

No. 1 --> Homemade dough is literally irreplaceable, but heck - I get it, you're busy, if you don't have time to make the dough take a shortcut! Use store-bought dough - they sell pre-made dough at the deli counter at my local grocery store.
No. 2 --> I love to use fresh mozzarella for these air fryer pizza rolls. It shreds terribly and sticks to itself so it's harder to spread but it melts so oh so beautifully.
No. 3 --> The recipe for the homemade dough includes pizza dough yeast, but if you only have active dry yeast, that will work too! Pizza dough yeast is the same as active dry yeast, but it contains additives to relax the yeast making it easier to roll out without snapping back.

Dough: I absolutely LOVE a homemade dough, so of course when whipping up this recipe, I really wanted to offer the option of homemade dough. It's really easy to make and I think you'll enjoy it too!
Mozzarella: Mozza cheese melts into a stretchy, gooey, pizza cheese, while cheddar will release oil when melted creating a soggy, oily pizza roll. Also, I recommend shredding your own mozzarella, pre-shredded cheeses contain anti-caking agents that can affect the texture.
Pizza sauce: Use a nice thick pizza sauce if possible! Some sauces have chunks but the base itself is quite watery, you're better to use a thicker, smooth sauce. This will help prevent soggy pizza rolls too!

If making homemade dough:
- In the bowl of your stand mixer, add the warm water. Stir in granulated sugar and yeast. Let stand 5-10 minutes or until the mixture is foamy on top and smells like beer.
- Dump flour, olive oil, and salt into the mixing bowl and mix on low speed with the dough hook until the dough comes together in a ball.
- Continue mixing in the mixer for 5-6 minutes, until the dough is smooth and elastic.
- Place the dough in an oiled bowl, and toss it to coat. Cover the bowl with plastic wrap and set it aside to rise until doubled in size, this usually takes between 30-60 minutes, depending on the temperature in your kitchen. I keep my house a balmy 73 degrees, so my dough is generally ready in 30 minutes!
- Homemade dough is ready to use!
How to make air fryer pizza rolls
- Turn out dough on a lightly floured countertop and roll out into a large rectangle approximately 15 x 12 inches. Try to keep the dough as rectangular as possible, this can be difficult but it will make rolling and cutting the dough much easier!
- Use a basting brush to brush your pizza sauce along the entire surface of the dough, I do like to leave a small 1/2" gap along the top to make it easier to stick to the dough to itself later on.
- Spread the pepperoni along the surface of the dough, then sprinkle cheese over top. This is a great time to add red pepper flakes or herbs to the pizza if you like!
- Starting at the edge closest to you, roll the dough into a large log. When you reach the end, stretch and pull the dough over the roll and press to secure it. This will help prevent it from coming apart.
- Slice the roll into the desired number of pizza rolls. I find a sharp, serrated knife works best for this, it easily cuts the dough and filling without tearing it up.
- Remove the air fryer basket and fit a piece of parchment paper with an overhang, as shown in the photo below, remove the parchment paper and replace the basket in the air fryer. Preheat air fryer to 300f.
- Once the air fryer has been preheated, place the parchment paper on the air fryer basket, then place the pizza rolls on the parchment paper leaving a gap in between each.
- Bake the pizza rolls in the air fryer at 300f for 17-18 minutes. I recommend checking on them at 17 minutes. Cook the rolls until they are golden brown and cooked through, the center bottom of the rolls should be cooked and no longer doughy/.
- Remove pizza rolls from the air fryer and allow to cool slightly before serving!

Batch:
This air fryer pizza roll recipe makes 6-8 rolls, depending on how you've rolled your dough out. A thicker, smaller layer of dough will give fewer rolls.
This recipe can easily be doubled, or tripled!
Storage:
Once cooked and cooled, your air fryer pizza rolls should be stored in the fridge in an airtight container for up to 3 days. They can also be placed in a freezer-friendly container or ziplock bag and frozen for up to 3 months.
These pizza rolls are good cold, but even better warm - pop them back into your air fryer for 2-3 minutes to reheat before enjoying the leftovers!

Ingredients

- 1 cup warm water

- 1 8oz can of pizza sauce
- pizza pepperoni
- 200 grams sliced pizza pepperoni
- 1 cup shredded mozzarella
