It’s the first week if summer holidays here in our neck of the woods. The weather has finally caught up to the date. My kids are tanned, and the mood is lax, and life is good.
Summer is the best.
Kevin and I have been talking, and I am trying to convince him that we should take our kids on a wicked province wide road trip. 5 days and a million pitstops. Tons of memories and a thousand photos. He’s not sure yet, but I think our kids would LOVE it.
Listen, I might be the worst traveller ever. As a kid I used to get violently car sick, and I can’t tell you how much Pepto we went through! As an adult, I still get nauseated if I’m anywhere but the front seat. And for some unknown reason, I just can’t handle sitting still for any length of time. Ha.
All of that aside, I think a tour around to a bunch of small towns to see their offerings, and seeing some spectacular scenery, including the mountains, with our kids would be a major bucket-list checkmark.
Road tripping aside, I’ve been really keen on trying new things in the past few weeks, and this cucumber mango salsa is definitely a keeper! The refreshing cucumbers mixed with the vibrant mangos makes this a healthy and guilt free topper, and if you’re anything like us, a side!
HERE’S WHY IT’S HEALTHY:
This tropical fruit is a vitamin A powerhouse, primarily beta-carotene. One mango can have nearly 10,000 IU of vitamin A! Mangoes also have good vitamin C concentrations and also some vitamin E. Minerals such as zinc, magnesium, and potassium are abundant in mangoes.
Bet you didn’t know that cucumbers carry the highest amount of vitamins E (in the seeds) of all vegetables! They also carry some vitamin A and C, as well as potassium. Due to the cooling sensation of cucumber, they are often used medicinally for burns and irritated tissue.
- 2 mangos, chopped
- 1 long english cucumber, chopped
- ½ small red onion, diced
- ½ red bell pepper, diced
- 1-2 hot red peppers, minced
- Juice of ½ lime
- fresh cracked salt to taste
- Combine all ingredients in a large bowl, enjoy!
