Smoked Chocolate Chips

Smoked chocolate chips are the upgraded, grown-up, divine version of chocolate chips. They’ve got a hint of campfire flavour that evokes memories of summer nights around the fire.
You may remember in my smoked bacon wrapped Oreos recipe that I claimed Traeger users were like hippies. They’ll smoke anything.
It’s me.

This smoked chocolate chip recipe is dedicated to hippiness.

Tips + Tricks
No. 1 —> I wrote this recipe with 1 1/2 cups of chocolate chips because most recipes call for around that many chips, but don’t let that hold you back! Fill the smoker if you want! Nothing on the recipe changes, just the amount of chips you stuff in there!
No. 2 –> Watch your smoke tube closely at first! They can be a bit of a pain if you don’t get a good initial fire. This is why a small propane torch or creme brulee torch is handy. They’ll light up much quicker this way than with a BBQ lighter.
No. 3 –> This is the hard part, you do need to let the chips mellow in their airtight jar for at least 5 days. Just liked smoked cheese, you want to let them rest so they don’t taste like you licked an ashtray!

Key Ingredients
Chocolate chips: Use a good quality chocolate chip for this recipe. I used semi sweet, but milk, or dark chocolate would work well too!
Pellets: for this recipe you want to use a pellet that gives a mild flavour and aroma, or a flavour that lends itself to chocolate and baked goods. I used an Apple Blend from LumberJack pellets that I’ve got specifically for smoking cheese but would also recommend alder, maple, or pecan pellets.

How to smoke chocolate chips
- Fill the smoke tube with desired pellets.
- Carry the tube to your smoker and place it on the bottom rack. Using a torch, light the pellets at the front of the tube. Allow the pellets to burn for 3-4 minutes before blowing out the flame. The embers from the pellets will continue to smoulder and create smoke.
- Once the smoke is established, spread your chocolate chips on a wire mesh splatter screen (yup! the same one from our smoked salt recipe) and place the screen on the middle rack of your smoker, opposite the smoke tube.
- Cold smoke the chocolate chips for 1.5 – 2 hours.
- Remove the chips from the smoker and allow them to rest on the rack for about 15 minutes before transferring them to an airtight container.
- Allow the chocolate chips to mellow out and absorb the smoke for at least 5 days before enjoying.
How to use smoked chocolate chips
Use your smoked chocolate chips in the same way you’d use regular chocolate chips. These chocolate chips are incredible in S’mores COokies.

I can’t help but think my bacon chocolate chip cookies would kick total ass with smoked chocolate chips in them too!

Storage information
Keep your smoked chocolate chips in an airtight container at room temperature until ready to use. They will last at least a couple months.

Recommended Equipment
Smoke tube – We grabbed a smoke tube off Amazon and love it! It was inexpensive and works awesome for all my cold smoking mayhem, and also cold smoked cheese!
Splatter screen – I grabbed a couple of splatter screens with lips when I was experimenting with smoked salt and I’ve actually used them quite a bit on the smoker for smaller items.
Smoker – You don’t exactly need a smoker for this recipe, but while testing, I did use my BBQ to try and cold smoke and it’s just not sealed the same, the smoke isn’t contained nearly as well as in the smoker. For that reason, I vote two thumbs up on my Traeger Timberline 1300!
