Summertime is the best time. The sun is hotter, the days are longer, the dirt ring in the tub comes back. And the food gets simpler, fresher, and tastier.
I don’t know about you, but summer around here is just different. Maybe it’s because summers in Alberta seem shorter. In our house, we truly live on summer time – chores get left behind in favour of playdates at the park, bedtime is less strict because it’s just too nice to go inside, and meals become simpler but somehow more delicious.
In the summer, I find that our diet consists mainly of grilled foods and fresh salads. No one has time (or wants) to cook complicated meals and clean up a million dishes. Food becomes a lesson in simplicity, but at the same time, a lesson in taste. I find that sometimes the most simple recipes are the most delicious. Keeping food closest to its most natural state often leads to the most nutritious and flavourful dishes.
When Kevin is home, he’s the grill master. I don’t really have the patience, but he does. Kevin works the grille like no one I’ve ever met. He will gladly BBQ a round of chicken thighs or tenderloin steaks for an hour if that’s how long it takes.
This recipe is kind of his creation. He came home from work one day raving about a BBQ they had at work. One of the guys brought jerk chicken and Kevin loved it.
I’m not kidding that he talked about jerk chicken for over a week. That was a month ago, and we’ve now had jerk chicken 4 times! Ha!

Jerk Chicken Buddha Bowl with Simple Mango Salsa
Ingredients
FOR THE SIMPLE MANGO SALSA:
- 3 Ataulfos mangos diced
- 1 red bell pepper diced
- 1/2 small red onion diced
- 1 jalapeno minced
- dash of lime juice
- 1 tbsp olive oil
FOR THE BUDDHA BOWL:
- 2 cups spinach
- 1 cooked chicken thigh grilled with jerk flavouring
- 1 cup cooked rice
- 1 mini cucumber
- 1 vine tomato
- red onion to taste
- 1/2 cup mango salsa recipe below
- green onion for garnish
- extra jerk sauce if desired, to drizzle.
Instructions
FOR THE SIMPLE MANGO SALSA:
- Combine all ingredients in a medium sized bowl, and enjoy!
FOR THE BUDDHA BOWL:
- Layer spinach at the bottom of a large bowl.
- Add other toppings.
- Garnish with green onion and jerk sauce if desired.

I am a bit confused. You linked a recipe for a jerk rub and also a recipe for a jerk marinade. Do you just choose one or the other for this recipe? And when you mention drizzling extra jerk sauce on your bowl are you referring to the jerk marinade recipe you linked or something else? Sorry! It looks so good I just wasnโt clear!
Yeah you bet, if you have extra jerk sauce, you can drizzle it on the bowl. If you used a dry rub, it will still have plenty of flavor, and the salsa will keep the bowl moist without needing sauce, imo
