FOR THE SIMPLE MANGO SALSA:

Ataulfos mangos
diced

red bell pepper
diced

small red onion
diced

jalapeno

dash of lime juice

FOR THE BUDDHA BOWL:

cups
spinach

cooked chicken thigh
grilled with jerk flavouring

cooked rice

mini cucumber

vine tomato
red onion
to taste

mango salsa

green onion
for garnish
extra jerk sauce
if desired, to drizzle.
Instructions
FOR THE SIMPLE MANGO SALSA:
Combine all ingredients in a medium sized bowl, and enjoy!
FOR THE BUDDHA BOWL:
Layer spinach at the bottom of a large bowl.
Add other toppings.
Garnish with green onion and jerk sauce if desired.
