Smoked Cake

Smoked cake, a sweet treat with a hint of smoke! Smokers aren’t just for meat anymore. It’s time to make Smoked Cake. Try this easy dessert, you’ll love it!

Once Kevy and I purchased our Traeger, we started smoking everything. We are indiscriminate. If you can eat it, you can smoke it.

It got to the point that we’d miss our smoker while we were camping. Somehow, my hubby found an awesome second-hand find online. He scooped it up and ran while yelling “START THE CARRRR”.

We now have a smoker at the lake. Porketta, or Porkie, as we lovingly call her, runs pretty much from the time we arrive at the lake to the time we leave.

A couple of weekends ago, I decided I was gonna smoke some brownies while at the lake. And on a whim, I tossed a boxed Rainbow Bit cake mix into the bag. It’s been requested every weekend since.

Tips + Tricks

No. 1 –> Use my icing sugar trick! Spray your baking pan with cooking spray or grease with butter, then flour the pan with icing sugar, tap and shake the sugar around till it’s coated the sprayed/greased portion of the pan, then knock the excess out. This ensures your cake will pop right out of the pan like magic. Except sugar.

No. 2 –> I, personally, like to mix my cake with 1/2 cup of water, 1/2 cup of whole milk. The directions on the one I buy request milk OR water, I find them too dense with all milk and not quite rich enough with all water, so I split the difference and I like that way best.

No. 3 –> Usually, I use my stand mixer to mix cake batter, but I am not so over the top that I’d have a spare stand mixer at the lake, so I whip the heck out of it with a whisk. I did the same for this photo tutorial, but, I mean, feel free to go either way.

No. 4 –> I always use a bundt pan for my cakes, because in this house, we all fight about the corner pieces and that is wholly avoided by having a round cake with LOTS of crust!

No. 5 –> If you’re looking for a from scratch recipe, I’d highly suggest this awesome condensed milk pound cake!

Ingredients

This may vary a bit depending on what your cake mix calls for. I followed the directions on the cake mix, except, instead of 1 cup of milk or water, I used half a cup of each.

How to make

  1. Start your smoker as per manufacturers’ directions. Set your smoker to the temperature that your cake mix requires.
  2. Using cooking oil or butter, lightly grease the cooking pan. Then flour the pan with icing sugar. This will prevent your cake from sticking AND give a beautiful crust.
  3. Mix your cake batter according to directions.
  4. Pour cake batter into prepared baking pan.
  5. Place cake pan on the bottom rack of the smoker, and bake following the directions on the box.
  6. Check on the cake halfway through baking time. At this point, if one side is darker than another, rotate your cake.
  7. Finish cooking until a toothpick inserted into the cake comes out clean.
  8. Remove cake from the smoker and set aside to cool.
  9. After the cake has cooled for 5 or so minutes, place a plate or tray over the cake pan, and flip it to remove the cake from the pan.
  10. Allow cake to cool to room temperature before icing.

What kind of pellets for smoked cake?

This one is up to you! We used Pecan at the lake last weekend to cook a cake and it was fantastic, but the weekend before, I used LumberJack Competition Blend, and it too was fantastic. I would avoid Mesquite and Hickory, personally.

As long as you’re getting thin, clean smoke from your smoker, the pellets should not make too much of a difference.

This recipe isn’t what it is without our Porkie. She’s a wonderful little smoker with tons of personality and she just won’t quit! You can grab your own Porketta at Wayfair, or Home Depot! Or you can grab the big daddy Timberline 1300 like we’ve got at home at Home Depot or Williams Sonoma!

  • 1 Rainbow Chip Cake Mix
  • cooking spray for greasing
  • icing sugar for flouring
  • ยฝ cup water
  • ยฝ cup milk
  • ยฝ cup vegetable oil
  • 3 eggs
  • 1 container of icing

Instructions
 

  • Start your smoker as per manufacturersโ€™ directions. Set your smoker to the temperature that your cake mix requires. Mine was 350F.
  • Using cooking oil or butter, lightly grease the cooking pan. Then flour the pan with icing sugar. This will prevent your cake from sticking AND give a beautiful crust.
  • Mix your cake batter according to box directions.
  • Pour cake batter into prepared baking pan.
  • Place cake pan onto the bottom rack of the smoker, and bake according to box directions.
  • Check on cake halfway through baking time. At this point, if one side is darker than another, rotate your cake.
  • Finish cooking until a toothpick inserted into the cake comes out clean.
  • Remove cake from the smoker and set aside to cool.
  • After the cake has cooled for 5 or so minutes, place a plate or tray on top of the cake pan and flip it to remove the cake from the pan.
  • Allow cake to cool to room temperature before icing, sprinkle with rainbow coloured sprinkles if desired.

* If using a different cake mix, the quantities and ingredients may change depending on mix requirements. Please double check your mix!
