Start your smoker as per manufacturers’ directions. Set your smoker to the temperature that your cake mix requires. Mine was 350F.
Using cooking oil or butter, lightly grease the cooking pan. Then flour the pan with icing sugar. This will prevent your cake from sticking AND give a beautiful crust.
Mix your cake batter according to box directions.
Pour cake batter into prepared baking pan.
Place cake pan onto the bottom rack of the smoker, and bake according to box directions.
Check on cake halfway through baking time. At this point, if one side is darker than another, rotate your cake.
Finish cooking until a toothpick inserted into the cake comes out clean.
Remove cake from the smoker and set aside to cool.
After the cake has cooled for 5 or so minutes, place a plate or tray on top of the cake pan and flip it to remove the cake from the pan.
Allow cake to cool to room temperature before icing, sprinkle with rainbow coloured sprinkles if desired.
