combine all ingredients, until a shaggy dough forms
mix by hand until just combined. Dough will be sticky
cover with plastic wrap and set aside for 1 hour autolyze.
after autolyze, it's time to add salt.
after sprinkling salt on loaf, it's time to stretch and fold.
wait 30 minutes before repeating stretch/fold/rest 2 more times
after final stretch and fold, shape the dough into a boule.
place boule seam side down on parchment paper.
place boule in bowl, cover with plastic wrap and rise till doubled.
score the surface of the dough with a razor blade or sharp knife
preheat oven with dutch oven inside of it, then lower bread into dutch oven.
bake at 450f covered for 30 minutes, then 15 minute uncovered.
wait till your sourdough cools before slicing!
