Ingredients
 

  • 2 mangos finely diced
  • 1 red bell pepper finely diced
  • 1 red onion finely diced
  • spicy peppers to taste. I've used 3 jalapeƱos or 5 red Thai peppers
  • 1/4 cup dried cranberries chopped
  • 2 tbsp lemon juice
  • 1 tbsp olive oil

Instructions
 

  • Combine all ingredients in a large bowl.
  • Stir well.
  • Serve with gluten free corn tortilla chips.
