1cupadd inslike chocolate chips or chopped nuts (optional)
Instructions
Remove the bread pan from the bread machine and set it aside.
In a microwave-safe bowl, melt 1/2 cup of butter. Meanwhile, beat 2 large eggs and mash 3 ripe bananas in a medium-sized bowl.
Pour melted butter, beaten eggs, and mashed bananas into the pan of the bread maker. Add 1/4 cup of sour cream, 1 teaspoon of vanilla extract, and 1 packed cup of brown sugar to the bread pan.
Sprinkle 2 cups of all-purpose flour on top of the wet ingredients. Followed by 1 teaspoon of baking soda, 1 teaspoon of baking powder, and 1/2 teaspoon of coarse kosher salt.
Return bread pan to bread machine. And select the Yeast-Free Bread setting (see below for more information on settings) then press start. Keep an eye on your bread machine during the mixing part of the process, it may be necessary to use a rubber spatula to scrape down the sides to ensure complete mixing.
If equipped, add 1 cup of chocolate chips, chopped nuts, or a combination of both to the Fruit And Nut Dispenser on your bread machine. If your machine does not have a dispenser, add the chocolate and nuts during the break between the first and second mixing cycles.
Bake bread in the bread machine. Checking for doneness starting with 15 minutes left. Test the bread machine banana bread for doneness by using a toothpick inserted into the loaf. If the toothpick comes out clean, the loaf is ready, if not, the loaf needs more time.
Once the bread is fully cooked, remove the loaf pan from the bread machine using oven mitts and allow it to sit undisturbed for 5-10 minutes, before turning it out onto a wire rack.
Allow banana bread to cool for at least 45-60 minutes before removing the mixing paddle and slicing. Slicing your banana bread before it is completely cooled will often cause a crumbly crumb.
Notes
best settings for bread machine banana bread
As always, consult your owner's manual when choosing the proper setting for this recipe. If you don't have access to your owner's manual, Google can help you locate one! Simply enter "Brand Model manual". For example, my bread machine would be "Breville BBM800XL manual".
If you simply cannot find a manual or information anywhere, look for a cycle that's 1 hour 30 minutes long. That should lead you in the right direction. Most commonly the settings will be called yeast-free, cake, sweet bread, or quick bread.
Batch:
This bread machine banana bread recipe makes 1 large loaf! I find it to be enough for 8-10 slices, depending on how heavy-handed I get with the thickness.
Storage:
Homemade banana bread can be kept at room temperature in an air-tight bag or container for up to 3 days - if it lasts that long! This banana bread can easily be stored in the freezer for 3-4 months; either whole or in slices.
Whole loaf: once completely cooled, carefully wrap it in plastic wrap or tin foil. Place the wrapped loaf into a ziplock bag and store it in the freezer for later enjoyment. To thaw, simply remove the loaf from the freezer and unwrap it before thawing at room temperature.
Sliced: once completely cooled, slice into desired width slices. Wrap 1-2 slices in plastic wrap before placing the slices into a ziplock bag and storing them in the freezer for later. To thaw, remove the slices from the freezer and thaw, wrapped at room temperature.
variations + substitutions
Frozen bananas: Swap fresh bananas for frozen counterparts, just warm them up to room temperature before using!
Greek yogurt: If you don't have full-fat sour cream handy, use plain, unsweetened greek yogurt, the results will be the same - delicious homemade banana bread!
Bread flour: Bread flour can replace the all-purpose flour in this recipe, in part or in whole. Bread flour may give a better rise and a chewier crumb.
