Smoked Pork Tenderloin
prepare tenderloin by removing any loose fat and then removing the silver skin.
make the brine by mixing water, salt, and maple syrup.
add tenderloin to the brine and place in the fridge for up to 12 hours. OR.
place tenderloins and half the brine in a bag and use your Avid Armor chamber vac to brine in 5 minutes.

while the pork tenderloin is brining, combine spices in a bowl to make the rub
remove tenderloins from the brine and blot dry.
season the tenderloins generously with homemade rub, and preheat grill to 225f.
smoke pork tenderloin at 225f for 90 minutes, then brush with your favorite BBQ sauce, then continue cooking until IT reaches 145f.
rest smoked pork tenderloin for 5 minutes before slicing into medallions and serving!
