Jalapeño  Cheddar Sourdough

gather ingredients: - sourdough starter - water - bread flour - salt - cheddar cheese - pickled jalapenos

Combine water and sourdough starter

add bread flour and mix until completely combined. Cover and rest 30 minutes.

add salt to the dough, knead in for 1 - 2 minutes. Rest for 30 minutes.

perform 3 sets of stretch and folds over the next hour and a half with a 30 minute break between.

after the last stretch and fold, turn the dough onto a floured surface and with wet hands, press into a rectangle.

spread diced jalapenos and cheddar over the dough before shaping.

transfer the shaped loaf to a banneton or bowl lined with clean flour sack towel.

allow dough to rise until puffy, or place in the fridge for a cold ferment

flip dough out of proofing basket onto a parchment sheet.

score the loaf and bake in a preheated dutch oven at 475f for 35 minutes covered, and 15 minutes uncovered.

allow to cool, then slice and enjoy!
