In a large bowl, whisk together flour, baking soda, baking powder, cinnamon, and salt.
Combine Amish friendship starter, eggs, and oil. Whisk until smooth.
Fold the dry ingredients into the starter mixture. Cover with a clean kitchen towel and set aside for 30 minutes.
Preheat the oven to 350f and grease 2 loaf pans. In a small bowl, make cinnamon sugar topping.
Spoon about a quarter of the batter into each of the greased loaf pans - using about half in total, reserving the remaining batter.
Sprinkle half of the cinnamon-sugar mixture on top of the batter.
Split the remaining batter between both loaf pans, and spoon it on top. Sprinkle again with cinnamon sugar topping.
Bake at 350f for 35-45 minutes, or until the top is golden brown and a toothpick inserted into the center of the loaf comes out clean.
