Step 1

Prep The Roast

Generously season the entire roast with coarse kosher salt and pepper. Set aside. Preheat sous vide water bath to 133f and allow the roast to rest until the bath has reached temperature.

Step 2

Vacuum Seal

Once the water bath reaches temperature, place the prime rib into a vacuum seal bag.

Step 3

Cook The Roast

Carefully lower the sealed prime rib into the water bath and cook at 133f for 6 to 8 hours. Once the water bath timer is up, preheat the oven to 500f and prepare a roasting pan by lining the bottom with parchment paper.

Step 4

Prepare To Sear

Blot the roast dry. Transfer the prime rib to the prepared roasting pan, rib side down. Brush the surface of the prime rib with olive oil, this is optional but can help accelerate and intensify the sear.

Step 5

Sear

Place the roast into the preheated oven and allow to cook for 10-15 minutes, until the fat cap has rendered and the whole roast has a nice browned layer.

Step 6

Carve

Remove the roast from the oven and allow it to rest for 15 minutes before carving and serving.
