Combine warm water, instant yeast, and sugar in the bowl of a stand mixer. Stir in the olive oil, salt, and sourdough discard by hand.
Add flour to bowl and knead for 4-5 minutes. Then cover and rest for 45-60 minutes.
Turn dough onto floured surface and divide into 14-16 pieces.
Roll dough into long rope, then fold into pretzel shape. Place on lined baking sheet then chill in freezer while oven preheats.
Dip each pretzel into baking soda bath for 30-45 seconds, then return to baking sheet.
Brush each pretzel with egg wash and sprinkle with coarse kosher salt.
Bake at 425f for 20-25 minutes or until golden brown. Cool on a wire mesh rack before enjoying.
