Coarsely dice Roma tomatoes, then toss them in a large bowl with salt.
Continue dicing the remaining ingredients: red onions, pepper, jalapeno pepper, and garlic. Transfer to a glass jar.
Combine sea salt and water, stir until completely combined.
Pour brine over salsa, ensuring all ingredients are completely covered. Secure the lid tightly. Set aside to ferment.
Keep your ferment somewhere where you'll see it daily to observe and open the lid and burp it.
Allow the salsa to ferment for 2-4 days, tasting it each day until you find the perfect finished product for your preferences.
Once salsa reaches your desired flavor, transfer it to the fridge to halt fermentation.
