Add flour and eggs to bowl of stand mixer, then add sourdough discard. Knead with dough hook for 5-8 minutes. Cover and set aside for up to 3 hours.
Generously flour a work surface. Portion dough into 4-6 pieces - keeping unworked dough in a covered bowl.
Flatten each dough portion into an oval shaped disk to help fit through the pasta roller better.
Gradually reduce the width of the pasta machine to thin the pasta, one pass at a time.
Once the dough reaches your desired thickness, pass it through the cutting attachment
Gather the sliced pasta, flour well, and swirl into nests to dry.
Add pasta to boiling salted water and cook for 3-4 minutes. Homemade pasta cooks more quickly than fully dried pasta.
