Bagels are the best breakfast food hands down. Schmear one with butter, or softened cream cheese, or make a BEEFLT out of it. Add some cinnamon sugar for a sweet treat. Or use it for a fried BACON and egg sandwich.

Combine flour, sugar, salt, water, and active sourdough starter. Knead for 5-7 minutes.

Grease a large bowl and toss the dough to coat, cover and set aside to rise for 8-12 hours. Once doubled place in fridge.

Turn dough onto floured surface and divide into 10-12 pieces and shape each into a tight ball.

Allow balls to rest then flatten each ball slightly. Poke your thumb through the middle of the ball.

Dip each bagel into baking soda bath for 30-45 seconds, then return to baking sheet.

Dip each bagel in desired toppings, consider using coarse sea salt, everything bagel seasoning, or even cinnamon sugar.

Bake at 425f for 20-25 minutes or until golden brown. Cool on a wire mesh rack before enjoying.
