Combine warm water, sourdough starter and half the flour in the bowl of your stand mixer. Let rest 10 minutes..

Add the remaining ingredients to the mixing bowl and knead 5 minutes. Cover and set aside for 30 minutes.

Perform 3 sets of stretch and folds 30 minutes apart. Cover tightly and transfer to the fridge for 24-72 hours.

Warm dough to room temperature, then divide into 8 pieces. Roll each piece into a ball.

Just before baking, roll each dough into a 1/4" round using a heavy rolling pin.

Place each pita on a preheated baking stone in a 500f oven and bake 3-5 minutes - until puffed and slightly browned.
