Smoked Turkey Brine

Brining the turkey helps to infuse flavor into the meat while also helping to keep the breast meat tender and moist.

Step 1

Prepare The Base

Combine warm water with the sugar and salt and stir vigorously until both are completely dissolved.

Step 2

Finish The Brine

Add warm water mixture to the bottom of a food safe brining bucket. Then add cold water.

Step 3

Add the Flavor

Add orange zest, garlic cloves, peppercorn, and bay leaves. Stir well to combine.

Step 4

Submerge Turkey

Give the turkey a good rinse under cold water. Remove the giblets, then place the turkey into the brine. If necessary, place a weight on the turkey to keep it submerged, place in the fridge.

Step 5

Day 2:

Stir the brine, and rotate the turkey a bit in the brine. Return to the fridge.

Step 6

Day 3:

Carefully lift the bird out of the brine, and rinse it well under cold running water, ensuring to rinse the cavity as well. Remove as much salty brine from the surface of the turkey as possible. Bake as desired.
