Pumpkin Swirl Sourdough Bread

There is just something so delicious about a long fermented sourdough packed full of inclusions

Build The Dough:


Combine active sourdough starter, water, pumpkin puree, and flour together until completely incorporated. Cover and rest 30 minutes.

Stretch And Fold


Add salt and perform a 2 sets of strech and folds, spaced 30 minutes apart, covering in between.

Add The Inclusions


Combine brown sugar, dried cranberries and pumpkin pie spice, sprinkle over surface of dough and complete one last stretch and fold. 

Bulk Ferment


Place dough in a large bowl, cover, and set aside to bulk ferment until doubled in size.

Shape The Loaf


Turn dough onto floured surface and preshape the loaf. 

Prove The Loaf


Place the dough into a banneton, or parchment lined pot and prove for 1 -2 hours.

Bake The Loaf


Preaheat dutch oven in the oven at 475f. Bake covered for 30 minutes, then uncovered for 10-15 minutes until golden.
