Jalapeno Cheddar Sourdough Bread

There is just something so delicious about a long fermented sourdough packed full of inclusions

Build The Dough:


Combine active sourdough starter, water, and flour together until completely incorporated. Cover and rest 30 minutes.

Stretch And Fold


Add salt and perform 3 sets of stretch and folds, spaced 30 minutes apart, covering in between.

Add The Inclusions


Press the dough into a rectangle and sprinkle with chopped jalapenos and diced cheddar. 

Shape The Loaf


Fold the dough into thirds, add more cinnamon spread, then roll into a log. Tuck in ends to form a boule.

Prove The Loaf


Place the dough into a banneton, seam side up and prove 2-3 hours

Score The Loaf


Turn the loaf onto a piece of parchment paper and score with a lame or sharp blade.

Bake The Loaf


Preaheat dutch oven in the oven at 450f. Bake covered for 35 minutes, then uncovered for 15-20 minutes until golden.
