gather ingredients: - dark rye flour, filtered water, active dry yeast

combine all ingredients, until thick and pasty

transfer to a clean jar.

lightly cover jar and set aside to rise.

after a few hours, it should look bubbly and airy.

Continue to feed daily. Use when doubled!
