Gather Ingredients

You'll need fresh habaneros, mangos, bell peppers, onions, garlic, giner, salt, and water.

Prepare Ingredients

Peel and dice the mangoes, onions, garlic, and ginger. Slice the habanero and bell peppers.

Layer Ingredients

Layer ingredients in washed glass jars.

Prepare The Brine

Combine sea salt and water. Stir until combined.

Add Brine

Pour brine over diced fruit and vegetables ensuring to cover all of them. Weigh down the contents of the jar.

Ferment

Set jar aside to ferment for 7-21 days. Keep an eye on the jar and burp as necessary.

Blend

Strain the contents of the jar and separate from the brine. Add 1/2 each brine, water, and white vinegar. Blend until combined.

Strain

Strain the hot sauce through a fine mesh sieve for an ultra smooth hot sauce

Bottle

Transfer the hot sauce to woozy bottles, or small jars. Store in fridge.
