HOW TO:

freeze beets

preheat oven to 400f.

Chop greens off beets, leaving 1" of stem

place beets in baking pan.

drizzle with olive oil, toss to coat and then season with salt + pepper.

cover baking tray with tin foil

bake at 400f for 1- 1.5 hours, until easily pierced with a fork.

remove the beets from the oven, allow to cook in baking pan until cool enough to handle.

run the beets under cold water and rub the skins to remove.

cut or slice beets in desired sizes.

bag the beets into suitable portions

freeze for up to 6 months
