I thought to myself: "self, Can we make peach jelly?" The answer is yes. A hundred times yes. The resulting jelly is delicate and delicious. This easy recipe might just be my favorite way to preserve peaches.

Either using the old fashion jelly bag method or by hitting the easy button and using a steam juicer.

Add peach juice, pectin, and lemon juice. Bring to a boil.

Once juice and pectin has come to a boil, add sugar and bring to a boil over medium high heat. Boil hard for 1 minute.

Ladle jelly into prepared jars. Wipe rims, seal jars, and transfer to preheated water bath canner.
