Snickerdoodles Without Cream of Tartar
In your stand mixer, beat together butter and sugar until fluffy, 2-3 minutes on medium-high speed.
add in the eggs and vanilla extract one at a time, mixing well between each addition.
combine flour, baking soda, salt, and cinnamon in a medium bowl.
add dry ingredients to wet and beat until completely combined.
cover mixing bowl and chill dough for 60 minutes in the fridge
prepare cinnamon sugar topping, then scoop the dough into balls, roll into the cinnamon sugar.
bake snickerdoodle cookies on a parchment lined baking sheet at 350f.
Snickerdoodle cookies need to be slightly under-baked - the edges should be set but the centers will look slightly gooey.
