Season Roast

Generously season roast with salt, pepper, and garlic powder.

Sear Roast

In a heavy dutch oven, sear the roast at 400f on each side.

Braise Roast

Once seared, add 1/2" water to the bottom of the pot and return to oven at 250f for 2-3 hours.

Rest Roast

Tent with tinfoil and rest for at least 10 minutes before slicing.

Step

Slice and serve!

Smoke at 225f for 40-45 minutes, tossing once or twice.
