Cinnamon Raisin Sourdough

gather ingredients: - sourdough starter - water - bread flour - salt - raisins - sugar - cinnamon - butter

Combine water and active sourdough starter. I like to whisk till combined.

Whisk bread flour with cinnamon, sugar, and salt, then mix into water until fully combined.

Set dough in a warm place to rest. I love my Brod + Taylor Proofing box 

perform 3 sets of stretch and folds over the next hour and a half with a 30 minute break between. 

In between the 2nd and 3rd stretch and fold, pour hot water over the raisins to rehydrate them. 

Pour drained raisins over the dough, and fold them into the during the 3rd stretch and fold

Turn dough out onto a lightly floured surface and press into a large rectangle. 

spread cinnamon butter mixture over the dough, then fold up a 3rd and spread more butter

form dough into a ball and place into a floured banneton.  Rest in the fridge overnight. 

Preheat dutch oven in oven to 450f. Turn dough out onto a parchment square. Score. Bake!

allow to cool, then slice and enjoy!
