Cinnamon Raisin Sourdough Bread

There is just something so delicious about a long fermented sourdough packed full of inclusions

Build The Dough:

Combine active sourdough starter, water, salt, sugar, and flour together until completely incorporated. Cover and rest 30 minutes.

Stretch And Fold

Perform a 2 sets of strech and folds, spaced 30 minutes apart, covering in between.

Add The Inclusions

Add soaked raisins to the bowl and complete one last stretch and fold. Recover and rest 30 mins. 

Add Cinnamon Sugar

Combine cinnamon, sugar, flour, and butter into a paste. Press dough into rectangle and spread with cinnamon mixture.

Shape The Loaf

Fold the dough into thirds, add more cinnamon spread, then roll into a log. Tuck in ends to form a boule. 

Prove The Loaf

Place the dough into a banneton, seam side up and prove 2-3 hours

Bake The Loaf

Preaheat dutch oven in the oven at 450f. Bake covered for 35 minutes, then uncovered for 15-20 minutes until golden.
