Combine warm milk, active dry yeast, and granulated sugar to proof. Meanwhile, add flour, sugar, and salt in bowl of stand mixer then add yeast, starter, oil and egg.

After kneading, cover the dough and rest for 45 minutes. Then ever 45 minutes or so, perform a series of stretch and folds.

Roll the dough into a large rectangle, then cut into two equal pieces.

Generously spread chocolate on both sides of the dough - leaving a 1/2" or so border of bare dough.

Roll each piece into a tight log. Then slice down the center lengthwise and begin the weaving process.

Moving clockwise, fold every second strand over the strand to its right.

Using the remaining strands, fold over to the left.

Tuck any loose ends under. Transfer to heavy skillet, cover and rise for 2 hours.

Bake for 25 minutes, transfer to wire mesh cooling rack to cool before slicing and serving.
