It pains me to admit it, but my husband is addicted to 7-11 Slurpees (this is not a sponsored post, though I wish it was… Would save us a fortune if he had a sponsorship haha!!). Kevin LOVES Slurpees, has always loved Slurpees, and will likely always love Slurpees. Much to my chagrin. This also means our kids want Slurpees. Always. Which means I’m always creating treats to enjoy instead. That’s how we came up with these paleo strawberry popsicles!
And because Dad always comes home with a Slurpee in hand on hot summer days, and our kids love everything that their dad loves, I am usually looking alternatives that I can give to them, knowing that I’m giving them actual nourishment and no mom guilt!
And a few weeks ago, I think I found a new substitute!
It was kismet.
Or maybe just a really good sale at the grocery store.
After the long winter months of trying to avoid all berries, because the prices were OUT OF CONTROL here in this small rural Alberta town. I’m talkin’ $7 a pound of strawberries, $6 for a 6oz clamshell of blueberries or raspberries. I was at the grocery store and found strawberries for $2 a lb. With a son like Zenen around, I knew to stock up. Strawberries are his favourite. Hands down.
You best believe I double timed my butt out of that store arms bursting with strawberry packages, like the Ikea commercial. Start the caaaar!
Strawberries have the highest amount vitamin C, iron, and potassium than the other berries. They are also rich in manganese which is essential for bone health and metabolism. Strawberries get their colour from a flavonoid group called anthocyanins, these flavonoids often exhibit anti-oxidant and tissue supportive and protective properties.
Coconut milk is very fatty, however, the saturated fats in coconut are smaller than most, and are called Medium Chain Triglycerides, these MCTs actually travel through the body without having to go through the metabolic breakdown process that larger fat molecules do – why this matters is that research has suggested that these MCTs actually mobilize existing fat stores for energy! (Fat makes you burn fat!)
We all know bananas contain lots of potassium, but did you know, potassium is regulates the water balance in your body? Potassium is also an important regulator of blood pressure, and energy metabolism! Bananas contain many vitamins and minerals, including iron, selenium, and magnesium. They are almost completely carbohydrate which means they give your body a quick burst of energy!
Strawberries and Cream Popsicles
- 2 cups chopped strawberries
- 1 banana
- 1 can full fat coconut milk
- Combine all ingredients in a high speed blender, I used my Vitamix, and blend until fully combined and silky smooth.
- Pour popsicle mix into popsicle molds, or freezie bags, and insert popsicles sticks as required.
- Freeze for 4 hours before eating.
- Allow popsicle mold to sit at room temp for 3-5 minutes to help with removal.
Once removed from the moulds, the popsicles can be stored in zipper freezer bags!
