I recently read a book that had made me stop and take stock on what I was eating. I’m not sure if you’ve seen the documentary Hungry For Change, but if you have and enjoyed it, this book might be right up your alley.
The 30 Day Vegan Challenge by Colleen Patrick-Goudreau didn’t take me 30 days to read, in fact it took me two quick nights. I couldn’t get enough of what the Colleen was saying. The book was thoughtful and thought provoking. She explained factory farming, the plight of factory-farmed animals, the poor treatment of dairy cows and many other eye opening things that I had never considered.
This book is the perfect balance of education and advocacy. It’s not preachy in the way that many lifestyle books can be, it maintains a guiding tone throughout the entire book, because let’s face it, going Vegan is a challenge and everyone could use some guidance. There are wonderful recipes, and tons of tips on how to work through cravings or desires for non-vegan foods. She also explains the best sources of proteins, calcium and other important minerals. All in all, it’s a complete look at changing your diet to one that’s plant based and living a compassionate life towards all the creatures on earth.
For years, I simply consumed what was put on my plate without a second thought. My mom always followed a very “healthy” way of life, in that she followed the food pyramid. We drank milk, we ate meat, and we melted cheese on nachos. These are all things people do daily, without thought. No thought to what it does to our bodies to eat this way, or what it’s doing to the environment. After reading this book, I’ve really started rethinking what the standard North American diet is doing to our bodies and our planet.
In the past few years, I’ve transitioned my diet from the standard North American one to a much more holistic way of eating. After suffering from two miscarriages and serious chronic iron deficiency, I changed how I view my health. I have a deep-rooted belief that food is our medicine, and that continually poisoning and overloading our bodies with chemicals and processed foods is making us sicker. In our house alone, we’ve been refined sugar free for 3-4 years, and have cut our processed food intake down by ¾. No, it’s not perfection, but the intent is there. We intend to eat better. We strive to be healthier. That’s what matters.
My shifting food philosophy coupled with this book and a nagging feeling deep down that there is something causing my body damage and inability to absorb nutrients in the way it needs has inspired me to try a 30 day Vegan challenge.

Here recipe 1: Soba Bowl
This is a great little noodle bowl. It seems more complicated than it is, it’s seriously easy and delish!
Soba Bowl and a 30 Day Challenge
- 1 package Soba Noodles
- 5 green onions chopped - divided
- 1/4 cup gluten free soy sauce or coconut aminos
- 1 tbsp maple syrup
- 1 tbsp apple cider vinegar
- 1 tbsp sesame oil
- 1 tsp mirin
- 2 tbsp olive oil
- sesame seeds - for garnish
- Cook the soba noodles according to package directions.
- Meanwhile, combine the liquid ingredients in a sauce pan and bring to a simmer. Cook over low heat for 5-10 minutes until thickened. Add half of the green onions.
- Drain and rinse the soba noodles, and dump into the pan with the sauce. Toss to coat.
- Transfer to bowl, and garnish with onions and sesame seeds!
