Kevin's been putting in some long hours lately, and this weekend, instead of letting it get me down, I packed up the kids and we went to my parents for a sleepover.
It really doesn't matter that it took me longer to pack than it did to drive over to their place. Or that we live in the same town. Or that we easily could have spent the day and then come home at bed time.
What mattered this weekend was family time.
Mom and I took the kids shopping to try and find Halloween costumes. Apparently, a men's size Kristoff costume is literally impossible to find. Ditto for women's Anna. We may have to scratch our idea of Frozen characters for Halloween. Though we did find a really great Elsa costume for Aedyn - I'm not 100% sure it will last till October 31st though, Aedyn has been wearing it for almost 24 hours straight. Ha.
Kate and I experimented with Pumpkin Spice Lattes and really knocked that one out of the park. Then I sort of helped her made some amazing aromatherapy heat packs (stay tuned for that DIY post), I was more in the research and scooping role. I also ironed. Like a boss.
In the evening, we all sat down for a family dinner. That's something I really miss about living at home. In our house, we don't often get to eat dinner together, especially when Kevin is working, as I will sometimes wait for him to get home to eat so he and I can eat together. I often find myself rushing around at the kids supper time to make sure they have everything and it's just right, or quickly tiding up the dinner dishes so I don't have a mess in the morning. I'm always in the same room with them, and we always talk, but it's just not the same. The best thing about being at my parents for dinner is that we all sit down to eat dinner together. The food is always fabulous, but the company is better.
Then, of course, came the movie and popcorn segment of the sleepover. The kids LOVED it. I also may have enjoyed a couple handfuls of freshly buttered popcorn.
Zenen, as usual, was the first one up. He decided to sleep in until 6:25am which was quite respectful of him. Considering he had woken me up 14 times in the night to talk about how he wanted to sleep on my pillow, move to his own pillow, couldn't find his blanket, and his toe hurt. We all watched cartoons and snuggled a bit while I eased myself into the day and my mom made pancakes.
After breakfast the kids went for a nice little quad ride with Grammy and Grampy, and a quick play outside. It was pretty chilly. 5c isn't all that warm! They came in and they were "coldie" as they put it. While they were outside, I helped Kate create a recipe for pumpkin pudding (oh it's good). And I sort of helped (supervised) while she made us some amazing little pumpkin pudding parfaits!
Then it was time to go. My heart was full. My kids were played out. And my mom sent me with a bunch of leftover ham from the night before.
And that's why we had quiche for supper.
Quiche isn't quiche without a crust. That would be a frittata. I had seen some recipes online for sweet potato crust, but I had a bag filled with fresh garden potatoes that a neighbour had so graciously given to us, and I'm sorry, paleo or not, fresh garden potatoes are incredible!
The logistics of shredding baby garden potatoes was just not something I felt like wrapping my head around today, so out came the ole food processor. I was done in seconds. I did my onion in there too. Saved me some watery eyes.
- 3 cups shredded potatoes
- 1/8 cup coconut flour
- 1 egg
- 1 onion, shredded
- 2 tbsp coconut oil/olive oil
- 1 small onion, chopped
- 1 cup spinach, chopped
- 1 small bell pepper, chopped
- 1 cup ham, chopped
- 7 eggs
- 1/4 cup almond milk
- salt and pepper - to taste
- Preheat the oven to 400f.
- Mix all ingredients for the crust in a medium sized bowl. Press into a pie plate.
- Bake at 400f for 20 minutes.
- Remove from oven and set aside.
- Preheat hoven to 350f.
- Melt oil in a heavy bottomed pan over medium heat, add onion and spinach and cook until onion is translucent. Add pepper and ham.
- Whisk eggs, milk, salt and pepper in a large bowl.
- Transfer onion mixture to eggs, stir well to combine. Pour into crust and bake at 350f for 45-50 minutes, or until the top is golden brown and set.
