This creamy cucumber dill salad is wonderful way to use fresh produce from the garden. A zingy, creamy sauce made with sour cream, vinegar, and fresh dill coats these garden cucumbers and red onion with a flavour blanket!

Sometimes I catch myself doing things and think to myself "oh my god, I've turned into my mother". Sometimes, I shake off. Other times, I snicker.

And then there are the times that I am elbows deep in the bowels of my washing machine, tools spread around, wishing I hadn't. Till I pull that rogue sock from the filter and save the day!

My mom is a real do-it-yourself-er. There's nothing she can't try, or, maybe more aptly won't try. ha. She's always got a project on the go, and she keeps herself incredibly busy.

It's one of those qualities that made its way through the gene pool to yours truly.

This recipe is dedicated to my genetic pool.

Cucumber Dill Salad Tips And Tricks

No. 1 --> I love this salad with fresh garden cucumbers. I haven't been blessed with a green thumb, but thankfully those who have them love me and share the bounty! If you don't have garden cukes, any cucumber will work!

No. 2 --> Blender balls really make salad dressing a breeze. I have a few on hand and love to use them for recipes like this. I simply add all of my ingredients to a mason jar, add my blender ball and shake. The mason jar works great because it's fridge and transport friendly while also being easy to handle when you're shaking.

No. 3 --> No one will judge you if you eat this cucumber salad every night of the week. Dill is such a summertime hero. There is nothing better than fresh from the garden dill. It's bright, distinctive anise/celery/fennel flavour is so fun to add to a meal.

How to make creamy cucumber dill salad

  1. Combine all dressing ingredients and mix until fully incorporated.
  2. Slice the cucumbers and onions.
  3. Toss cucumbers and onions with dressing until coated.

Don't have fresh dill?

Use preserved dill if that's what you have on hand, don't let that stop you from enjoying this recipe. Fresh dill is more fragrant and flavourful, but freeze-dried dill, or even frozen dill, works great in this recipe. If using dried, reduce the dill by half.

When to serve this cucumber salad

Whenever you find yourself saying "what can I do with a bunch of cucumbers?" Haha.

But in all seriousness, there's literally never a bad time to put this creamy dilly cucumber salad on the table, but I especially love it when we're having a prep-heavy meal because it's just so easy.
