Creamy Cucumber Dill Salad

This creamy cucumber dill salad is wonderful way to use fresh produce from the garden. A zingy, creamy sauce made with sour cream, vinegar, and fresh dill coats these garden cucumbers and red onion with a flavour blanket!

When the garden is prolifically producing cucumbers and you don’t think you could make another jar of old fashioned fermented dill pickles, you have to try this salad!

It’s quick, it’s easy, and it’s perfect for hot summer nights.

Cucumber Dill Salad Tips And Tricks

No. 1 –> I love this salad with fresh garden cucumbers. If you don’t have garden cukes, any cucumber will work!

No. 2 –> Blender balls really make salad dressing a breeze. I have a few on hand and love to use them for recipes like this. I simply add all of my ingredients to a mason jar, add my blender ball and shake. The mason jar works great because it’s fridge and transport friendly while also being easy to handle when you’re shaking.

No. 3 –> No one will judge you if you eat this cucumber salad every night of the week. Dill is such a summertime hero. There is nothing better than fresh from the garden dill. It’s bright, distinctive anise/celery/fennel flavour is so fun to add to a meal.

The best thing about this cucumber salad is the simplicity of the ingredients, most of us will have them on hand at all times:

  • Dressing:
    • sour cream
    • olive oil
    • vinegar
    • dill
    • salt & pepper
  • Salad:
    • cucumbers
    • red onion

How to make creamy cucumber dill salad

  1. Combine all dressing ingredients and mix until fully incorporated.
  2. Slice the cucumbers and onions.
  3. Toss cucumbers and onions with dressing until coated.

Don’t have fresh dill?

Use preserved dill if that’s what you have on hand, don’t let that stop you from enjoying this recipe. Fresh dill is more fragrant and flavourful, but freeze-dried dill, or even frozen dill, works great in this recipe. If using dried dill, reduce the dill by half.

When to serve this cucumber salad

Whenever you find yourself saying “what can I do with a bunch of cucumbers?” Haha.

But in all seriousness, there’s literally never a bad time to put this creamy dilly cucumber salad on the table, but I especially love it when we’re having a prep-heavy meal because it’s just so easy.

Ingredients
  

DRESSING INGREDIENTS:

  • ½ cup sour cream
  • 1 tablespoon vinegar
  • 1 tablespoon olive oil
  • 2 tablespoon chopped fresh dill
  • salt and pepper to taste

SALAD INGREDIENTS:

  • 6 medium-sized garden cucumbers
  • ½ red onion

Instructions
 

  • Combine ½ cup sour cream, 1 tablespoon vinegar, 1 tablespoon olive oil, 2 tablespoon chopped fresh dill and salt and pepper to taste in a mason jar with a blender ball and shake well to combine.
  • Peel, halve, and slice 6 medium-sized garden cucumbers, and slice ½ red onion thinly.
  • Place cucumbers and onions in a salad bowl and pour dressing on the chopped salad.
  • Toss until completely coated.

Notes

This salad keeps in the fridge up to 24 hours.
If using dry dill, reduce by half.
