Buffalo Chicken Dip

It’s no secret that Kevin and I love spending time with our friends. We love having them over, we love visiting at their place, we just love being with those who make us happy.

It’s also no secret among our friend group that I have this blog.

Our buds are pretty good about it, they take it in stride when I subject them to recipes in testing. Or hollering “hand’s off!” before I take a couple of quick photos.

Last night, some of our friends dropped by after hockey practice and luckily for them, I had already taken photos of this buffalo chicken dip. We dug in. It was hella delicious.

This recipe is dedicated to our friends putting up with my shite.

Tips + tricks

No. 1 –> Use canned chicken if you don’t have shredded rotisserie chicken on hand.

No. 2–> This buffalo dip is a great take and bake dip. It’s a perfect dish to bring to a Super Bowl party or other get together where you’ve got to bring an appetizer.

No. 3 –> Got lots of friends? There are no problems doubling, or more this recipe! Just use a larger pan, and get more dippers!

Ingredients

  • Cream cheese
  • Frank’s Buffalo Sauce
  • Shredded cheddar
  • Shredded chicken
  • Green onions

How to make

  1. Mash all ingredients until completely combined.
  2. Transfer to a small cast iron skillet (or another oven-safe baking dish)
  3. Bake at 350f till melted and bubbly.
  4. Serve hot!

How to serve

This recipe is perfect for game day, your Super Bowl party, or any other time you need a quick and easy appetizer.

I always serve my dip with carrot sticks, celery sticks, and baguette rounds. I’m of the opinion that this spicy dip shines when served on crusty bread.

Most definitely!

This dip can be mixed up to 3 days in advance. Simply remove it from the fridge, transfer to your skillet, and bake when ready!

I am a cast iron advocate. I use cast iron whenever and wherever possible. But that’s because it’s got so many awesome qualities.

Sure you can bake this dip in any oven-safe baking dish. But the cast iron will keep the dip hot and dippable for a LOT longer than any other dish.

Ingredients
  

  • 4 oz cream cheese, softened ½ block
  • cup Frank’s Buffalo Wing Sauce
  • 1 cup shredded cheddar
  • 1 cup shredded chicken or 1x 156g canned shredded chicken
  • 2 sliced green onions sliced

Instructions
 

Bake Now

  • Preheat your oven to 350f.
  • If using canned shredded chicken, drain off any liquid and fluff with a fork. If using regular or rotisserie chicken, finely shred and then give it a coarse chop.
  • In a medium-sized bowl, mash together 4 oz cream cheese, softened and ⅓ cup Frank’s Buffalo Wing Sauce. Then add 1 cup shredded cheddarand 1 cup shredded chicken. Stir in 2 sliced green onions last.
  • Transfer to a small cast iron skillet or other oven-save dish and bake at 350f for 25-30 minutes, or until completely melted and bubbly.
  • Remove from oven, and serve immediately with celery sticks, carrot sticks, crackers, baguette rounds, chips, crackers or pretzels.

Make Ahead / Take And Bake Directions:

  • If using canned shredded chicken, drain off any liquid and fluff with a fork. If using regular or rotisserie chicken, finely shred and then give it a coarse chop.
  • In a medium-sized bowl, mash together the cream cheese and Frank’s Buffalo Sauce. Then add the shredded cheddar and the chicken. Stir in the onions last.
  • Transfer to an airtight container and store in the fridge until ready to bake.
  • When ready to bake, preheat your oven to 350f.
  • Spoon the buffalo chicken dip into your cast iron skillet, or another oven-safe dish.
  • Bake at 350f for 25-30 minutes, or until fully melted and bubbly.
  • Remove from oven, and serve immediately with celery sticks, carrot sticks, crackers, baguette rounds, chips, crackers or pretzels.
