In early August Kevin and I took our kids to Calgary for a few days of fun, sun, and family time. We had a lot of fun, not so much sun, and tons of family time. I loved our little staycation, except I caught a bad bug while we were there.
I’ve been so incredibly sick since. This virus has kicked my behind. My poor body; I swear it spent 2 weeks just trying to survive. I don’t know how – the last thing I wanted to do for the past 14 days was eat or drink a damn thing. Until I made this.
The inspiration from this came a little while back when I was visiting my dear Grandma! She had had a little bout of vertigo and my mom asked me to keep her company for an afternoon while she was housebound. I jumped at the opportunity and we spent several hours just visiting and browsing her huge stack of cookbooks – apparently, I come by cookbook collecting honestly. I happened to spot a peach and cream cheese sandwich recipe – Grandma and I both agreed that I should try it and let her know how it goes.
Well, Gram, I know you’re reading this… So here’s the review: It was fabulous!
I definitely recommend this. Especially on some of my fabulously easy bread machine bread!
Open Faced Mango Blueberry Cinnamon Sugar Cream Cheese Sandwich
- Whip the cream cheese, brown sugar, and cinnamon in a small container with a fork until well combined and uniform.
- Spread the cream cheese mixture on bread, top with sliced mango, and spoon blueberry syrup atop.
