Kevin and I made a stop at Costco last weekend when we were in the city. I love Costco. My wallet does not.
I ended up picking up a 2.5 lb bag of apples. Now, that’s a lotta apples. I generally eat at least one per day with a healthy dose of almond butter, but there is literally no way that I’d be able to eat all these apples before the go bad. Even with the kids help, they are only good for one per day, between both of them.
The other day I was drinking my hot coffee, like what else is new?! And thinking to myself: Dang, a baked apple would be so good right now! But wait, aren’t those filled with refined sugar and oats. EEK! Traditionally, they are, but I reworked the recipe to suit my nutritional needs.
While I was mixing things up for the apples, I remembered, from back in my gluten eating days, an apple tart I used to make for Kevin with a frangipane. It was incredible, and in the frangipane, I used to put a little bit of maple whiskey.
Why, yes. We are Canadian, even our whiskey tastes like maple. Ha ha.
I used some of Kate’s granola in this recipe, because I totally love using recipes inside recipes. If you don’t happen to have a batch of her granola on hand, use 1/4 cup of chopped mixed nuts (walnuts, pecans, etc) and 1/4 cup of raisins.
Maple Whiskey Baked Apples
Preheat oven to 400f.
Slice the top and bottom off of each apple, and scoop out the core, but don't slice right through the bottom.
Mix whiskey, syrup, granola, spices and raisins in a bowl.
Place apples in a small baking dish, and divide the filling between both.
Bake at 400f for 18-20 minutes, or until the apples pierce easily with a fork.
Serve with coconut ice cream, if desired!
