gather ingredients: - unbleached flour, filtered water, active dry yeast

combine all ingredients, until a thick and pasty

transfer to a clean jar.

lightly cover jar and set aside to rise.

after a few hours, it should look bubbly and airy.

after about 12 hours, the starter will look deflated.

time to feed: measure 50 g starter, 50 g water and 50 g flour

stir until completely combined then transfer to a clean jar

set aside to rise

once the sourdough starter is bubbly and active it's ready to use

this is a hungry starter. The high rise marking and slide marks say it's feeding time

liquid gathering on the top of the starter is also a sign that your starter needs food.
