So it turns out that everyone in my house is a little nuts. Nuts for nuts. We all LOVE nuts. Each and every one of us, right down to the dog.
No kidding. I mean, have you seen a dog who loves nuts before? I haven’t!
I generally keep a mason jar filled with either roasted or dehydrated nuts on the kitchen counter within reach for the kids in case we have a snack attack! Whenever Stella sees one of the kids with their hands in the nut jar, she just gets so excited her whole backend wags uncontrollably, then she starts going through her trick repertoire!
Honestly, we love to eat them. Almonds, cashews, hazelnuts, walnuts, pecans. We don’t care.
It sounds silly, but I’m not afraid of nuts anymore. I used to be hesitant to eat them because all you’d ever hear about nuts is how they are so high in fat. But what no one tells you is that some fat is actually a good thing and that some fats are better than others. Nuts are high in both unsaturated fats and Omega 3 fatty acids – both of which are very good for you! Not to mention the fibre, vitamins, and other amino acids present in nuts!
That love has driven me to find easy alternatives to roasting that don’t include the oven, or stirring. or any more work than the baaaaare minimum.
I briefly discussed using one of my favourite appliances to roast my almonds in my Roasted Almond Butter post. 2 little lines. I kid you not, it’s easier to roast these almonds than it is to type that many words.
So here’s how you do it!
- 2 cups almonds
- 1 tbsp coconut oil
- Add ingredients to your Actifry
- Walk away for 12-15 minutes.
- Dump roasted almonds onto a paper towel to absorb excess coconut oil.
- Store in airtight container once cool.
