One of my favourite things in life is tortilla chips and fresh salsa. Chips with Spicy Pico de Gallo, chips with my Loaded Guacamole, chips with my Cucumber Mango Salsa, basically chips and diced fresh fruits and veggies!

Ingredients
  

  • 2 mangos finely diced
  • 1 red bell pepper finely diced
  • 1 red onion finely diced
  • spicy peppers to taste. I’ve used 3 jalapeños or 5 red Thai peppers
  • 1/4 cup dried cranberries chopped
  • 2 tbsp lemon juice
  • 1 tbsp olive oil

Instructions
 

  • Combine all ingredients in a large bowl.
  • Stir well.
  • Serve with gluten free corn tortilla chips.
