Sometimes I struggle with breakfast. I have a long history of just avoiding breakfast and drinking coffee until lunch or so. This presented a problem for me when I switched over to a more health centric lifestyle. As I began to cut out the bad foods, and eat more good foods, I settled into a eating routing. My body was actually telling me that it was hungry before noon. It was a strange sensation waking up actually hungry! I’ve been chugging along with my breakfasts, but I find I am missing variety.
Last year, I stumbled upon the blog Oh She Glows. Angela had a super yummy recipe for baked oatmeal. Kate and I spent a few weeks tweaking it and making it just right, baking it in mason jars and eating it all week. Unfortunately, oats are often contaminated by wheat or other gluten containing grains. Oh, and they are a grain. So that kind of ruled them out.
The other day, I was eating a little bowl a Skinny B, and it hit me. Why not make Paleoatmeal!?
So I did. And I baked it in little mason jars to take to work and eat. And I loved it. And I made it again.This recipe is suitable for the 21 Day Sugar Detox – just omit the raisins and be sure to use green apples!
- 3 cups almond milk
- ¼ cups hemp hearts
- ¼ cup chia seeds
- ¼ cup chopped nuts
- ¼ cup raisins
- 2 apples, diced
- 2 tsp cinnamon
- Preheat oven to 350f.
- Combine all ingredients in a large bowl.
- Spoon into mason jars.
- Bake at 350f for 25-30 minutes.
- Store in fridge until ready to eat!
